2 Day Cook & Judge Class

We are pleased to host a KCBS certified judging & cooking class May 30 & May 31, 2020.

The Judging class will be hosted by Bill & Debby Gage of the KCBS International team.  The cooking portion of the class will be thought by pitmasters Jim & Becky Johnson. This hands on course will allow for you to judge KCBS events around the world.

The format of the course will be in class Saturday morning. Saturday afternoon will be hands on preparing meat and working on flavor profiles. Cooks will cook overnight and Sunday morning the class will continue. The course will finish by judging the meat prepared overnight.

KCBS sanctions over 500 barbeque contests world wide. From volunteering to actual event production, their members also offer assistance to civic and charitable organizations who organize events.

Tracking trends in barbeque related products, and equipment

Teaming up with other food organizations and the media to promote barbeque

About Jim And Becky Johnson

Jim Johnson holds 78 Grand Championships in the art of barbecue.  His 33 years of expertise in the BBQ industry has landed him many titles, but the “King Of BBQ” reigns true for this Memphis native. Johnson, from day one, has prided himself on learning by trial and error and applying the “science of BBQ” to his cooking method.

The world-renowned pitmaster and wife, Becky, are International Instructors for the Kansas City Barbecue Society (KCBS), with KCBS membership in 34 countries, Jim has had the supreme honor of mentoring lovers of the BBQ competition, all over the world!  Jim teaches students across North & South America and Europe on a variety of barbeque topics ranging from barbecue basics & essentials to expert competition- level barbecue techniques.

    • Temperature/Time

    • Hints and tips

  • Dinner

  • Food prepping

Day 2

  • Second half of KCBS Judging Class

  • Turn in cooking class meats by Class participants

  • Announcement of winners
